Lately, 7 month old Benji has not been wanting to eat his second stage Gerber food. He almost always snatches the spoon away from me and chews on it until the food is gone, then of course he throws the spoon at me or the floor as if demanding for more! I've introduced finger foods such as organic puffs or mozzarella cheese, but those are just as snacks, so I wondered, what can I give him as a meal that he can feed himself but wont be as messy as handing him a jar of baby food? With the help of Pinterest, I came along something I knew he'd like: baby pancakes! It was great because I had all the ingredients in the pantry, and secondly, because I knew it be something I wouldn't feel guilty about giving him since most of the ingredients can be found in the baby food section of your pantry. I customized the recipe along the way and in the end, the pancakes were a success! They were soft and weren't cakey which reduces the choking hazard all parents fear (but always supervise your eating child) and they tasted like crepes! lets just say they were great and Ben's picture is proof!
You will need: • 1 cup of all purpose flour • 1/2 cup of baby rice cereal (or oatmeal cereal) • 1 cup of milk or formula • 1 small bottle of Gerber apple or fruit juice or you can use 1/2 cup of water •1 small jar of banana Gerber food •3 egg yolks •A splash of strawberry extract (you can use whichever flavor) You can get creative and add fresh fruit or spices for flavor! Simply, just mix the ingredients as if youre making pancakes. If too thick simply add more juice or water until you get the right consistency. Taste the batter and add flavors to your liking; if you like it, baby will like it! Take a table spoon of batter and pour over oiled skillet. Cook, serve, cool, and watch your baby enjoy! |
