Even though it has been almost 2 weeks since I moved in to our apartment, I still find myself so busy reorganizing and cleaning. So busy that I didn't even realize that Easter was right around the corner! If you personally know me or have been following my blog for a while, you'd know that I just LOVE doing Holiday activities with and for my son. I think it's a great way to make memories with your little ones and make their childhood a memorable one. Two years ago, when I was pregnant with Benji, I made some cute lemonade Easter Basket cupcakes for the family. And last year for Benji's first Easter, I made him his first snack filled Easter basket! This year however, I was stuck on what kind of activities or basket to give my little Benjamin now that he is a toddler. I wanted to give him something that he'd enjoy but that didn't require candy. Don't get me wrong, I think a little candy once in a while isn't bad for your little one. It's honestly the mess of the chocolate and the stickyness of the lollipops that I despise. Just thinking of Benjamin having a chocolate mustache and having sticky little hands is making me cringe! Just as I was about to give up on Easter ideas. I ran into a post on Facebook by Parents magazine about clever ideas on candy free Easter baskets for your kids! http://www.parents.com/holiday/easter/crafts/easter-baskets-without-candy/?socsrc=pmmfb1503285 (I'm on my phone doing this blog post so I apologize for the lack of click on links!) I took a bunch of these ideas and decide, why not make Ben an Easter basket filled with activities we can do on Easter? I decided to fill his basket with things like bubbles, chalk, crayons, snacks and a small kite for us to fly at the park after we pick some eggs! I think my idea was rather clever because the basket will be filled with things that we'll use then and the future rather than it being filled with things that will probably be forgotten or put into storage.
I have yet to finish his basket, and when I do, you bet I'll post pictures! Until then, what will you do for Easter? xoxo I hope that everyone had a safe and Happy Holidays and a Happy New Year! I have gone MIA for a loooong time and it saddens me to not have the same routine I had in my previous post to have some mommy time which meant that I could blog more often. If you're wondering why, it's because I finally took the step into becoming a student again which I will talk about in another post! It's exciting but I'm still adjusting. Anyway, I finally found some spare time for myself and decided to write about some delicious, nutrious, healthy muffins I made earlier today that I found in - you guessed it- Pinterest! What I loved about these little muffins is that you can eat them as a snack or breakfast and Benjamin actually loved them! And you want to know what makes them "guilt free"? They have absolutely no artificial flavors, sugars and flour!
You will need: •1 1/4 cup rolled oats– blended in a blender or food processor to a powder – like oatmeal flour •1 cup rolled oats •2 Tbs Milled Flax seed (optional; I didn't have any so I skipped these) •2 teaspoons baking powder •1 teaspoon baking soda •1/2 teaspoon salt •1/4 cup Agave (or honey or sugar if you don't have any agave/honey) •1 egg •3/4 cup milk •1/3 cup vegetable oil •1/2 teaspoon vanilla extract •1 cup mashed bananas •1/2 cup semi-sweet chocolate chips (optional) Directions: Combine ground and rolled oats, flax seed, baking powder, soda, and salt. Stir in the egg, milk, oil, agave and vanilla. Add the mashed banana and chocolate chips and combine thoroughly. Grease or line a muffin tin with paper bake cups, and divide the batter among them. Bake at 350 degrees F for 15-20 minutes (10 minutes for mini muffins). Enjoy!
