I hope that everyone had a safe and Happy Holidays and a Happy New Year! I have gone MIA for a loooong time and it saddens me to not have the same routine I had in my previous post to have some mommy time which meant that I could blog more often. If you're wondering why, it's because I finally took the step into becoming a student again which I will talk about in another post! It's exciting but I'm still adjusting. Anyway, I finally found some spare time for myself and decided to write about some delicious, nutrious, healthy muffins I made earlier today that I found in - you guessed it- Pinterest! What I loved about these little muffins is that you can eat them as a snack or breakfast and Benjamin actually loved them! And you want to know what makes them "guilt free"? They have absolutely no artificial flavors, sugars and flour!
You will need: •1 1/4 cup rolled oats– blended in a blender or food processor to a powder – like oatmeal flour •1 cup rolled oats •2 Tbs Milled Flax seed (optional; I didn't have any so I skipped these) •2 teaspoons baking powder •1 teaspoon baking soda •1/2 teaspoon salt •1/4 cup Agave (or honey or sugar if you don't have any agave/honey) •1 egg •3/4 cup milk •1/3 cup vegetable oil •1/2 teaspoon vanilla extract •1 cup mashed bananas •1/2 cup semi-sweet chocolate chips (optional) Directions: Combine ground and rolled oats, flax seed, baking powder, soda, and salt. Stir in the egg, milk, oil, agave and vanilla. Add the mashed banana and chocolate chips and combine thoroughly. Grease or line a muffin tin with paper bake cups, and divide the batter among them.
