Following my son's birthday party (which I still have to post pictures of), I realized the amount of food we had left over! From bags of peas to uncooked biscuits that I had bought for pigs in a blanket, it was food galore in the fridg! We had a good 3 pounds or 2 of ground beef and cooked bacon left over since I decided to do sliders for the main course of Benji's birthday party. I knew that if it sat there in the fridge any longer, that sooner or later the meat would go to waist and that I'd deeply regret it since I think I work well with ground beef if I say so myself!
I got on pinterest as usual and looked around for some ground beef recipes but could not find what I was looking for. And as usual, I went to the kitchen and whipped up a left overs casserole that was cheesy and delicious! You will need: •2 pound of ground beef •A small bag of peas •2 cups of carrots •Half an onion •1 table spoons of butter •4 oz of cream cheese •As much cheddar shredded cheese to your liking •1/2 cup to 1 cup of cooked bacon •1 package of Pillsbury flaky biscuits Preheat the oven to 350°. Put your peas in the microwave until defrosted and set aside, if you buy frozen peas and carrots you can 2 birds 1 stone this by putting the bag in a bowl in the microwave. If you have carrots lying around your fridge, peal, and dice into circles or squares and cook in microwave until tender. Cut half of your onions into squares and set aside. Butter a skillet and throw in the ground beef and cook until it's fully cooked. When your peas and carrots are fully cooked, drain both the veggies and meat and mix together. Add the onions. Since I had bacon left over and it was already cut and cooked, I threw a good half a cup to a cup in the mix. I feel like this added the most flavoring but if you'd like you can skip this step. If you'd like some bacon, cook up slices in another skillet or in a microwave safe plate, cut, and add to the mixture. To make this cheesy, add your cream cheese and wait for it to melt. Next add a handful of shredded cheese. Take an oven safe dish and add a layer of the meat and veggies, then, you guessed it, more cheese. Repeat until it's almost to the top. Next add the biscuits on the top. Set your timer to the directions of the biscuits. You might need to add a little bit more time because the biscuits might be a little undercooked on the bottom. In that case add 5 more minutes. Once finished, take out and enjoy! This was a quick recipe I whipped up in order to save the left overs. It was surprisingly delicious and enough for the whole family. Enjoy! Comments are closed.
