Ever since I did the cauliflower crust pizza a few months ago, I became obsessed with cauliflower and the many ways you can transform the veggie and substitute it over unhealthy foods. Today I decided to try something new. Cauliflower Nuggets! The recipe I followed was called "Cauliflower Tots", but I made mines a little big to be called tater tots and I thought, what the hey, they could be nuggets too! Get your apron on and get cooking because these nuggets are amazing! You will need: •2 cups cooked cauliflower florets, finely chopped *see note
•1 large egg •1 large egg white •1/2 cup onion, very finely chopped •1/2 cup reduced fat sharp cheddar cheese, grated •1/2 cup breadcrumbs salt to taste cooking spray Directions: *to cook the cauliflower florets, steam a little over 2 cups raw cauliflower florets in a little water covered for for 4 to 5 minutes or until tender but not mushy, then drain well and dry on paper towel, then using a knife finely chop and set 2 cups aside. I thought it be faster if I blended the cauliflower, it was a good idea but if you decided to blend them, make sure to not blend too much or else it will become too grainy and you really want the cauliflower to stay a little chunky! Preheat oven to 400°F. Spray a nonstick baking pan, with cooking spray. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste. Grab the mixture-about a table spoon or so-and make into balls. Once on the baking pan, press down on them to create that nugget like shape. Put them in the oven and set the time to 20 minutes. When the timer says 12 minutes, flip the nuggets. And cook for the remaining time. Cool and enjoy. What was great about this recipe is that you can eat them off the plate or make it as a small side dish to some fish or chicken if you'd like!
