If there's one thing I'm good at, it's making delicious side dishes! We haven't gone grocery shopping so when it was lunch time, I had no idea what I would cook today. I decided that I'd cook up some chunky ham slices on the skillet because they're Benji's favorites. But what else could I add to our meal? I remembered there were some medium sized potatoes already boiled in a pot on the stove so I figured, why not make some yummy comfort food? Creamy and cheesy potatoe skins! You will need: •Some potatoes (large or medium, depending on occasion) •1/2 cup to 1 cup of shredded mozzarella cheese (you can do half a cup of mozzarella and half a cup of cheddar for extra cheesy goodness!) •3-4 table spoons of Sour Cream •1/4 cup of parmesaan cheese •Bacon jelly** (see side note) •chives (according to taste) •salt and pepper to taste Instructions:
Preheat your oven to 450 degrees. Bring some water to boil and boil your desired amount of potatoes until tender. Set aside to cool. Now in a large skillet, add a generous amount of vegetable oil to boil. Once cooled, cut your potatoes in half long-ways like a little boat, and carefully scoop out insides into a large bowl. It's ok if there's still a thick layer of potatoes in the skins. Set aside the skins. Next, add a good 4 table spoons of Sour cream into the potatoes and mash them until they become pretty smooth like a home made mash potatoe. Add your cheese(s), chives, salt and pepper and mix thoroughly. Next add your bacon jelly to taste.** I used bacon jelly because we didn't have any bacon. If you have bacon however, you can use that instead! Mix again. Your oil should be hot by now, so now you can carefully fry the potatoe skins until the edges look crispy. Once they're cooled, you can add your potatoe filling inside the skins. Sprinkle with cheese and cook in oven for seven minutes. After 7 minutes, you can broil the potatoes so the cheese gets crispy. But remember to check on them so they don't burn! Serve with some sour cream and chives and enjoy! What I love about these is that you can choose a healthier alternative like sweet potatoes and Greek yogurt if you'd like! Comments are closed.
